Easy Eats: Pasta with Broccoli Rabe and Sausage

Most of my meals are vegetarian, but I recently won a box of Isernio chicken sausages and did the only thing I was sure to do with them: make a pasta dish.  This dish is wildly simple, and the Isernio Italian chicken sausage was the perfect addition: it was so flavorful and delicious.


Start with a short pasta (orecchiette, cavatelli — whatever you’d like) and follow this recipe for dinner for tonight.

Pasta with Broccoli Rabe and Sausage

What you Need:

  • 1 pound pasta
  • table salt
  • olive oil
  • 2-6 cloves of garlic, chopped
  • 8 oz. sausage (really, try the Isernio Italian chicken sausage)
  • 1 bunch broccoli rabe, cleaned and chopped into manageable-sized pieces
  • 1/2 cup chicken broth
  • grated Parmesan cheese


1. For pasta: Bring water to a boil, add some salt and allow to dissolve. Add pasta in and cook until al dente. Strain.

2. In a large skillet over medium heat, cook the sausage, breaking it into small pieces. When sausage is nearly finished, add the garlic and 1 tablespoon of olive oil. Add broccoli rabe on top, pour broth over rabe, and cover. Allow to steam until broccoli rabe is soft and bright green, about 2-3 minutes.

3. Combine pasta and broccoli rabe/sausage mixture in a bowl. Top with Parmesan cheese.
